Southwest Emu

1 lb Emu Steak
3 TBS. Honey
1 TSP ground coriander (optional)
20 oz. jar of Hot Salsa

Cut steak into bite size chunks or into finger strips.  

In frying pan mix salsa, honey and coriander with raw emu meat.  Cook on stove top with medium heat until meat is done (approx. 20 minutes).  Note, if you find this is a little too hot for your taste, add a little more honey to counter the effects of the hot salsa, but still retain the flavor. 

Serve with red beans and rice.
