Roast Emu in a
Jacket
2 Emu Fan Steaks
2 cloves garlic, minced
2 tablespoons vegetable oil
2 teaspoons dried basil
˝ cup margarine, melted
2 cups fresh, fine breadcrumbs
6 tablespoons fresh parsley, snipped fine
4 green onions, chopped fine
Pepper to taste
˝ cup water
Preheat oven to 350°.
Combine garlic, oil and basil. Roll steaks in seasoned oil. Pour remaining oil
and the water into baking dish.
Combine crumbs and remaining ingredients. Roll steaks in seasoned crumbs,
pressing into meat. Pour any left over crumbs into the bottom of baking dish.
Place steaks in baking dish on top of crumbs, cover and bake 1 hour. Serves 4 to
6.
