Tennessee Emu Egg Breakfast

1 large emu egg, or 12 chicken eggs, beaten
1 cup chopped onion
1 cup chopped bell pepper
1 cup cubed cooked potato
1 package shredded Cheddar Cheese
1 cup cubed tomato
Salt to taste
Pepper to taste
Hot Sauce

Sauté the onion, peppers and potatoes in melted butter until onions begin to turn clear.  Add the egg and scramble.  When the egg is done, remove from heat and mix in the shredded cheese, tossing lightly.  Add the tomato and return to heat only long enough to heat through.  You do not want the tomato cubes to lose their shape.  Serve immediately with hot sauce on the side.
